Favorite Ingredient: Coconut Cream

I was excited by the popularity of my Simple Chocolate Mousse that I shared earlier this month! One of the most frequent questions I received was what type of coconut cream to use in this delectable dessert! 

For the best thick creaminess, I use a full-fat coconut milk, preferably gum-free and in a non-BPA lined can, chilled to separate the cream from the liquid or So Delicious Dairy Free cartons of coconut milk. When searching for brands that are free of additives and not packaged with BPA (which can be an endocrine disrupting chemicalI have found these work well:

  • You can make an easy creamy topping for pies, cobblers, hot cacao, granola and crisps with this easy whipped coconut cream!

Whipped Coconut Cream

Prep Time 10 minutes
Total Time 10 minutes

Ingredients
  

  • 1 can full-fat coconut milk chilled overnight
  • 1/2 tsp vanilla extract optional
  • few drops liquid stevia optional

Instructions
 

  • Chill the can of full-fat coconut milk overnight, without shaking or moving it too much so that there is separation of the cream and liquid.
  • The next day, chill a large mixing bowl and carefully add the cream, leaving the liquid behind (it is perfect to add to smoothies or for baking!).
  • Beat the cream for about 30 seconds with a mixer until creamy and light.
  • If you would like, you can add 1/2 tsp of vanilla extract for flavor and a few drops of stevia and beat until smooth and mixed well.
  • Use immediately or refrigerate to keep cool.

Notes

To thicken your cream further, a tablespoon or two of tapioca starch can help.

Researchers found that gut microorganisms are especially malleable at a young age — though they were unable to pinpoint an exact age for when the gut microbe community is most likely to change. This study, published in Immunology and Cell Biology, suggests that exercising in your younger years may alter your microbiome, promoting brain health and metabolic activity.

Favorite Farmer’s Market Find: Blood Oranges

One of my favorite memories from my time studying abroad is Sicily is drinking gorgeous, sweet blood orange juice each morning!

The stunning jewel toned fruit is slightly tart, sweet and a bit berry-like in flavor. They make a beautiful, refreshing juice and are also perfect as a snack or dessert!

Oranges

Oranges are rich in antioxidants including vitamin C, which supports the immune system and adrenal glands. The flavonids in citrus are great for helping to reduce inflammation to protect you from heart disease and other chronic illness.

Citrus also helps the body absorb iron, so try adding some oranges to your greens to absorb more plant-based iron. Vitamin C also helps boost collagen for smooth, healthy skin!
