Whipped Coconut Cream

Ingredients

can full-fat coconut milk
chilled overnight
1/2
tsp
vanilla extract
optional
few drops liquid stevia
optional
Instructions
Chill the can of full-fat coconut milk overnight, without shaking or moving it too much so that there is separation of the cream and liquid.
The next day, chill a large mixing bowl and carefully add the cream, leaving the liquid behind (it is perfect to add to smoothies or for baking!).
Beat the cream for about 30 seconds with a mixer until creamy and light.
If you would like, you can add 1/2 tsp of vanilla extract for flavor and a few drops of stevia and beat until smooth and mixed well.
Use immediately or refrigerate to keep cool.
Notes
To thicken your cream further, a tablespoon or two of tapioca starch can help.
