Simple and Quick Chocolate Chia Pudding with Superfood Nutrition!

This recipe is quick to throw together in a few minutes and only requires a few real-food ingredients to create a delicious snack! It’s rich, creaminess satisfies your cravings for chocolate pudding while also packing in some quality nutrition and extra superfoods.

It provides protein, iron, calcium, omega-3 fatty acids and fiber, thanks to chia seeds as well as extra anti-oxidants, vitamin C and flavonids from cherries and acerola berry.

To make this recipe extra special, I combine the rich chocolatey cacao with tart cherry for flavors reminiscent of a Black Forest cake. The tart cherry flavor comes from the soaked and blended dried cherries (you can also use fresh if available and adjust liquid as needed) with acerola berry powder for an additional tart cherry flavor and superfood boost! The combination of vitamin C and other antioxidants in acerola make it valuable for fighting free-radical damage in the body and reducing inflammation.

  • Add all ingredients to a high-speed blender and blend until smooth, about 1-2 minutes. Sweeten to taste with liquid stevia or other preferred sweetener.
  • Allow to chill and thicken in the fridge for a few hours.
  • Serve chilled or store in the refrigerator covered for up to 2 days.

Notes

Adjust the type and quantity of sweetener to your taste. Depending on the type of stevia and the level of preferred sweatness you desire, you may prefer to adjust the quantity.
Top with coconut whipped cream, cacao nibs, berries or other fruit and enjoy!

You can keep this recipe refined sugar-free by sweetening it only with the cherries and a bit of additional stevia to taste, keeping it free of refined and processed sugars but full of flavor.

While delectable and satisfying, this is a gluten-free, vegan chocolate pudding that is healthy enough you could even enjoy it for breakfast!
