Ingredients

cup
wild rice
cooked according to package instructions
1
cup
shredded apple
about 1 medium apple
1
cup
shredded roasted beets
about 5 small or 3 medium beets
1
pinch
of cumin
1/4
tsp
Ceylon cinnamon
Salt & pepper to taste

large lettuce leaves
washed and dried
Instructions
Roast whole beets (with skin intact) at 375F until tender. Cool.
Prepare wild rice according to package instructions for 1 cup total of cooked rice.
Wash, slice into quarters and core apple with skin intact. Shred using a box grater or food processor for 1 cup total of shredded apples.
Shred cooled roasted beets with box grater or food processor for 1 cup total shredded beets.
Mix rice, apples, beets, cumin and cinnamon in a medium sized bowl. Season with salt and pepper to taste.
Place washed and dried lettuce leaf bowls onto serving platter. Spoon about 3/4 cup of rice, apple, beet mixture onto each lettuce bowl and enjoy!
Notes
Can be served warm, cold or at room temperature.
