Pretty in Pink Apple Beet Wild Rice Salad in Lettuce Boats

Fresh, healthy, colorful & flavorful! Pretty in Pink Apple Beet Wild Rice Salad in Lettuce Boats makes a perfect light vegan, gluten-free, plant-based meal.

Ingredients
  

  • 1 cup wild rice cooked according to package instructions
  • 1 cup shredded apple about 1 medium apple
  • 1 cup shredded roasted beets about 5 small or 3 medium beets
  • 1 pinch of cumin
  • 1/4 tsp Ceylon cinnamon
  • Salt & pepper to taste
  • 4 large lettuce leaves washed and dried

Instructions
 

  • Roast whole beets (with skin intact) at 375F until tender. Cool.
  • Prepare wild rice according to package instructions for 1 cup total of cooked rice.
  • Wash, slice into quarters and core apple with skin intact. Shred using a box grater or food processor for 1 cup total of shredded apples.
  • Shred cooled roasted beets with box grater or food processor for 1 cup total shredded beets.
  • Mix rice, apples, beets, cumin and cinnamon in a medium sized bowl. Season with salt and pepper to taste.
  • Place washed and dried lettuce leaf bowls onto serving platter. Spoon about 3/4 cup of rice, apple, beet mixture onto each lettuce bowl and enjoy!

Notes

Can be served warm, cold or at room temperature.
