Gingerbread Chai Spice Grain-Free Cutout Cookies: Paleo, Gluten-Free, Vegan, Dairy-Free, Egg-Free, Soy-Free, Nut-Free

A delicious gluten-free paleo vegan festive grain-free cutout cookie with flavors of chai spice and gingerbread, made without gluten, eggs, yeast, nuts or dairy!

Ingredients
  

  • 2 cups tigernut flour
  • 1/4 cup coconut flour sifted
  • 3/4 teaspoon baking powder corn-free, aluminum-free
  • 1 teaspoon Ceylon cinnamon
  • 1/2 teaspoon ginger
  • 1/8 teaspoon cardamom
  • pinch of cloves
  • pinch of nutmeg
  • ΒΌ teaspoon salt
  • 1/4 cup melted coconut oil
  • 4 tablespoons coconut nectar
  • 6.5 Tbsp unsweetened apple sauce/puree
  • 1 teaspoon vanilla
  • 1 chia or flax egg 1 Tbsp ground flax or chia seeds in 2.5 tbsp water, stir and allow to thicken for at least 5 minutes
  • Sugar-Free Vanilla Icing
  • 1/3 cup Coconut Butter
  • 8 drops liquid stevia vanilla or plain
  • 1/4 tsp vanilla extract if using plain stevia
  • Gently warm coconut butter to melt and combine with vanilla and stevia.
  • Spread warm icing atop of cooled cookies and allow to cool.

Instructions
 

  • Preheat oven to 350 degrees and line a baking sheet with unbleached parchment paper or grease with coconut oil.
  • In a medium mixing bowl, whisk together the dry ingredients (flour, spices, salt, baking soda, cream of tartar).
  • Mix together the oil, coconut nectar, applesauce and chia/flax egg.
  • Pour the wet mixture into the dry mix and blend with a wooden spoon to moisture all ingredients evenly.
  • Roll out the dough and cut out with your favorite cookie cutters OR make into 1-inch balls and press down slightly with the palm of your hand to flatten the cookies. You may desire to chill the dough in the fridge if needed to make rolling easier.
  • Bake for 8-12 minutes until the tops are firm and no longer wet and the bottoms are lightly golden.
  • Cool on cookie sheet for 10 minutes, remove and cool completely on a baking rack. Store in an airtight container for 3-5 days

Notes

If you prefer a more strongly spiced cookie, you can increase the spices up to double the stated amounts to taste.
