These energy bites provide portion-controlled healthy nutrition in a easy-to-transport little ball. They are no-bake, so you can stay cool in the August heat with no need to turn on the oven. You can whip up a batch and keep them in the freezer, ready to pop into your backpack, grab for a quick breakfast or snack or pack into a lunchbox

Gluten-free oats, allergy-friendly chocolate chips, shredded coconut and a variety of seeds provide a nutritious sweet, chocolately and savory combination, just like your favorite trail mix! They pack a good balance of carbohydrates, protein and healthy fat without too much added sugar to provide sustained energy without a crash. They are a welcome addition to any lunchbox or as a quick breakfast, dessert or snack. This recipe also makes a nice post-workout recovery mini-meal since it has a good amount of protein and is low in added sweeteners.

To meet the needs of nut-free schools and accommodate those with nut allergies, I used hempseed butter which provides healthy omega fats and protein. I have also made these with sunflower seed butter or you can substitute any nut or seed butter that you prefer. These yummy bites are also gluten-free (be sure to use certified gluten-free oats), dairy-free (when you choose allergy-friendly, dairy-free chocolate chips) and soy free making them suitable for many allergy-friendly diets! 

No-Bake Gluten Free Chocolate Chip Trail Bites
Yields 12
Gluten Free, Vegan, Dairy Free, Nut Free, Soy Free and low in refined sugars, these satisfying snacks are reminiscent of your favorite trail mix in a perfect portable form for your lunchbox or backpack!

Ingredients
  1. 1 cup gluten-free oats
  2. 1/3 cup hemp hearts
  3. 1/3 cup raw pumpkin seeds roughly chopped or crushed
  4. 1/4 cup ground flax seeds
  5. 1/4 cup ground chia seeds
  6. 1/2 tsp Ceylon cinnamon
  7. Pinch sea salt
  8. 1/3 cup allergy-friendly mini chocolate chips
  9. 1/4 cup shredded coconut
  10. 1 tsp vanilla extract
  11. 1/2 cup + 1Tbsp hempseed butter
  12. or other nut or seed butter
  13. 1/3 cup coconut nectar
Instructions
  1. Combine dry ingredients in a large bowl.
  2. In a separate small bowl, mix seed butter, vanilla and coconut nectar to combine well.
  3. Stir wet ingredients into dry ingredients with clean hands or a large spoon.
  4. Cover mixture and place in fridge for 30-60 minutes.
  5. Roll ~1Tbps of the mixture into bite sized balls.
  6. Refrigerate or freeze in an airtight container until ready to enjoy!
Notes
  1. You can substitute your preferred seed or nut butter and your favorite nuts or seeds to personalize this recipe to your taste.
