Coated with a layer of delicious finely shredded coconut, cinnamon, ginger and salt, (affiliate links) these fries have a slightly sweet, salty and spiced flavor! They are perfect without any added sugar, but if you love a cinnamon and sugar flavor, you can add a bit of coconut sugar (affiliate link) to the mix.

When slicing your sweet potatoes into strips, first cut the ends off so they are easier to slice. You can then stand the potato up on the flat end and cut lengthwise into slices, about 1/4 inch thick, before slicing them into matchstick pieces, depending on the size of your potatoes.

Spread your fries out well on the pan into a single layer to avoid excess moisture buildup in your oven. This will help to ensure the fries get nice and crisp on the outside. It is also helpful to try to avoid excess coconut mixture on the pan since it will burn easily.
